Terroir
The wine terroirs of the Var, in the heart of Provence, are those of the oldest vineyard in France.
It was the Phoenicians who introduced some 600 years before J.C the first vines. Subsequently, the Romans in this "Provincia romana", contributed to the development of the vineyard. The first wines produced were rosés.
Winemaking
Night mechanical harvest. Short maceration. Pressing. Malolactic thermo-regulated alcoholic fermentation blocked. Traditional vinification in stainless steel vats, controlled temperatures.
